Beginner Friendly Sweet Potato Biscuits

My sweet potato lovers, this super quick and easy Sweet Potato Biscuit recipe is for you! With only six ingredients you can make this in no time. One of my 2023 goals was to overcome fear of baking things from scratch, a fear developed due to lack of access! Most of my childhood, the oven at my house was broken. So while I learned to cook, I didn’t grow up learning or even attempting to bake; except cookies in a toaster oven. Well I am happy to share that I started my baking journey! As I am learning, I am always looking to make things that are beginner friendly. With my love for sweet potatoes and biscuits, I knew this recipe was a great start for me.

Ingredients:

1 large sweet potato (baked)

1 cup flour of your choice (I used whole wheat pastry flour)

1 tbs baking powder

1/2 tsp salt

1 tbs brown sugar

A pinch of cinnamon and nutmeg

6 tbs unsalted butter (cold)

1/2 cup milk of your choice

Directions:

  1. Bake sweet potato at 400 degrees until tender. Allow to cool and remove skin mash and set aside

  2. Add dry ingredients to a bowl

  3. Add buttter and mix with pastry cutter or fork until the mixture form pea size bits

  4. Add milk and 1/2 cup of cooked sweet potato. Combine mixture until dough forms

  5. Sprinkle flour in flat surface or cutting board. Place dough on surface, roll or flatten dough with hands

  6. Use round biscuit cutter to form biscuits. Place biscuits on sheet pan lined with parchment paper.

  7. Place in oven set to 400 degree oven and bake for 15 minutes.

  8. Enjoy with honey or jam spread.
